Hummus & Vegetable Pasta

Ingredients

2 tablespoons olive oil
1 medium onion sliced
1 cup cherry tomatoes. sliced
2 garlic cloves sliced
1 cup spinach
1 cup plain hummus
1 pound spaghetti pasta
Juice of 1 lemon + zest
ยผ cup chopped fresh basil plus more for serving


Method

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package directions. Keep 1 cup of pasta cooking water, then drain the pasta and return to the pot to keep warm.
  2. In a large saucepan, heat the olive oil over medium heat. Add the onions and tomatoes and cook for 5-7 minutes or until golden brown. Add the garlic, and cook for 30 seconds, or until fragrant. Add the spinach and cook until wilted.
  3. Add the hummus and ยฝ cup of the pasta cooking water, lemon juice and lemon zest, and stir until a sauce becomes creamy. Add more pasta water to thin.
  4. Transfer the cooked pasta to the sauce pan, turn off the heat and toss everything together.
  5. Place into a bowl and serve with shaved parmesan cheese or basil, if desired
