½ cup Signature Tahini, Spicy Tahini or Green Tahini
¼ cup natural honey
1 whole chicken
1 chopped carrot
1 chopped zucchini
1 chopped red capsicum
Fresh herbs to garnish – basil, oregano.
2 tsp kosher salt
1 tbsp olive oil
Method
Preheat oven to 180 degrees celcius.
In a large bowl, add tahini, honey, salt and pepper, mix together.
Rub half the mixture under the chicken skin and the remaining on the chicken.
Place chopped vegetables on a baking sheet with parchment paper, drizzle olive oil and add herbs. Roast in oven for 20 minutes or until golden brown.
Roast the chicken in oven for 45 minutes. Cover with aluminium foil and roast until the thermometer indicates in the thickest portion it’s reach 74 degrees.
Let stand for 10 minutes, then carve and garnish with herbs.
