Tahini Granola

Ingredients

  • 1 cup rolled oats
  • 1 cup flaked coconut
  • 1/4 cup pumpkin seeds
  • 1/2 cup chopped almonds
  • 1/3 cup fresh blueberries
  • 1 tablespoon ground cinnamon
  • 1/4 cup maple syrup or rice malt syrup
  • 1/4 cup Tahini Neri Raw tahini
  • 1 teaspoon vanilla extract.

Method

  1. Preheat oven to 160 degrees celcius.
  2. In a large bowl, combine oats, coconut, pumpkin seeds, almonds and cinnamon.
  3. In a smaller bowl, combine the wet ingredients – maple syrup, tahini and vanilla.
  4. Combine the wet with the dry ingredients, mix well.
  5. Spread granola onto baking tray with parchment paper, lay evenly.
  6. Bake for 10 minutes, then stir on the baking tray and bake for another 5 minutes or until golden brown.
  7. Allow granola to cool down and then place into an airtight container to keep fresh.
